This data collection of WhatsApp has no relation to the new privacy policy update, which means WhatsApp is already taking lots of your personal data from your mobile.

The new privacy policy is mainly focused on the business use of WhatsApp and its data sharing with other Facebook companies.
This will not affect much to the normal users of WhatsApp. 

And as per WhatsApp, your chats are private and encrypted and no one else other than you can see that. But if you are concerned about your other data like your location, birthdate, shopping's, etc. to be shared with other Facebook companies then you have to switch to other apps like Signal or Telegram, Right Now!!! as WhatsApp has already shared your such data with Facebook.

Switching to another app has one limitation that all your family and friends and network might not be available on that new app. WhatsApp is currently the most popular and used the app and is now become a default messaging apps for billions of people. So switching to another app will take time as your network has to be available on that new app.

"Signal" is a good option, as it has the best privacy feature and it is a non-profit organization which runs on donation. They don't need any of your data to make a profit.
